Wine Cellar

Choose your cellar

The best wine cellar is underground, with a compressed clay or earth clay and North facing ventilation without any vibration inside. But, if you do not have the possibility of having an underground cellar to store your bottles, opt for a wine cellar (refrigerated cabinet) where you will store your wines which will be kept at the ideal temperature. In any case, you will have to store your bottles spacing them enough so that the air circulates between the bottles. To cellar properly the wine it is recommended to get a constant temperature of 12-14°C (53-57°F), if the temperature is higher the wine will age quickly. An ambient hygrometry of 70-80% is required to avoid deteriorated labels and corks. Dark environment with no high light like neon.

Criteria for wine longevity

Depends on the wine type, vintage, the appellation and wine’s terroir; the vinification is also important with volume. Wine must be tasted regularly. In larger bottle like Magnum (150cl) the wine takes longer to age, because the oxygen supply allowed by the cork is lower compared to a regular bottle (750ml).
