About wine process

Grape Variety

A grape variety is a variety of vine or grape used to produce wine. In each region and wine appellation there are different grape varieties. The grape varieties are different both in terms of grapes and foliage and different in terms of colors, aromas, and sizes. The vines or grape varieties are differentiated by their clusters and their foliage. The grape varieties do not have the same taste and are different according to the color, the size and the aromas as well as the level of acidity in the grape. There are more than 10,000 varieties of grapes in the world but only a dozen is mainly used.

Blended Wines

The red wine is made with black grape varieties.
The white wine is made with white grape varieties.
Champagne is made either with black grape varieties or with white grape varieties such as Chardonnay, Pinot Noir, Pinot Meunier, Pinot Blanc and Pinot Gris…

Production of Grape Varieties

We can produce wine in “Monovarietal” or mix several grape varieties. Some countries such as South Africa, Argentina, Australia, Chile, New Zealand, and the USA use “Monovarietal” wines, which makes it easier to identify the characteristics of the different grape varieties. Some wine producing regions use blended wines, which consist of a mixture of different grape varieties, this is the case for the production of Bordeaux wines.
Important: the grape varieties are not considered as varieties of vines, because they do not reproduce naturally from a seed, but only by "cutting", by grafting or "layering".

Cuttings

It is a method of vegetative propagation of certain plants, which makes it possible to give birth to a new plant identical to the mother plant. The method of cuttings is simple, all you have to do is plant a fragment of a branch (stem, root, etc.), in water or in a mixture of soil and water so that it can make new roots.

Marcotage

Allows to produce a stem at ground level which emits secondary roots, to obtain a new plant.

L'Ampélographie

This is the process of identifying grape varieties by the clusters of vines, inflorescences, and leaves. This science makes it possible to identify for each grape variety, production, susceptibility to parasites and diseases, flowering, and the quality of the grapes.
